How do I make my Vanilla Cake with Ginger Ale?

Making your cake should be a fun experience, and we’ve made it easy for you with illustrated step-by-step directions:

  1. Allow 3 large eggs and 8 oz (1 cup) sour cream to come to room temperature.
  2. Preheat your oven to 335°F.
  3. Prepare 2 (8-inch) cake pans*. See Tips and Tricks
  4. Pour the Cake Base Mix #1 and Cake Base Mix #2 in a large mixing bowl. Whisk together.
  5. In a separate bowl, whisk together the 3 eggs, 8 oz sour cream, Ginger Ale, and 3 tsp vanilla until smooth.
  6. Pour the wet ingredients into the large bowl with the dry ingredients. Mix until all the dry ingredients are incorporated. Batter can look lumpy.
  7. Mix on Medium speed with a stand mixer or hand mixer for 2 minutes.
  8. Split the cake batter between two 8-inch cake pans and bake for 35 to 42 minutes. The cake is done when the tops are domed and springy to the touch, and a toothpick inserted into the center comes out clean (no moist batter).
  9. Remove the pans from the oven and let cool completely on a wire rack
  10. Fill, frost, and decorate with your favorite buttercream.
